An Update on Thermal and Non-Thermal Stabilization Methods
Massimiliano Pelacci, CFT S.p.A. and University of Parma, a specialist for this topic and member of the IFU Working Group for Thermal and Non-Thermal Stabilization Methods, presents an overview of the reduction kinetics as well as an update from the three standpoints of microorganisms inactivation, enzymes inactivation, nutrients and secondary compounds preservation.
In addition, John Collins, IFU Executive Director, will explain what has been changed and renewed within the IFU methods, IFU recommendations and what other guidance IFU can offer for the juice industry. This will be extremely important for colleagues from quality department, but can also help your sales team in giving them a better understanding for the quality parameters of your products, no matter if they are working in purchasing or selling.
